El Vol de Nit Organic
These grapes are found at an altitude of 400m above sea level. After complete de-stemming, the grapes are macerated for 48 hours. Fermentation on the skins for 15-18 days at 23º- 27ºC. Bleeding off a portion of red wine juice (18%) prior to malolactic fermentation. Aged on 300L first year French oak barrels for 13 months.
The aroma is intense and rich with notes of ripe black fruit, spice and balsamic hues. On the palate it offers a full texture, with smoky notes and silky tannins. Ideal with game dishes, stews and cured cheeses. best served at 16 °C
